But Vetter has some comfort for you: A Cider Cake Recipe. It's actually an update of an older version, because I found, the original recipe in the roof of my Grandmas farmhouse, so that I can actually provide you with exact measures.

Genuine Hessian Cider Cake

Let's go:

1. Take a round cake tin where you can take off the rim, in Germany we call it a jumptin because you can make the rim jump of. Put the short pastry batter on the bottom and the rim of the tin. You can make the batter from the ingredients below or buy it in a supermarket.
(Ingredients: 125 gr Butter or Buttersubstitute, 125 gr Sugar, 250 gr Flour, 1/2 bag Bakingpowder, 1 bag vanillised Sugar)

(And for people used to emperial measurements please calculate your pounds on your own.)

2. Then fill in 1,5 kg of unskinned and sliced apples.

3. Now to the interresting part of the story: cook 3/4 liter Cider with 2 bags of Vanilla Custard, 250 gr Sugar and one bag of vaniiliced Sugar untill it gets sticky and put it over the unbaken cake.

4. Don't put the oventemperature to high, because the Cider Cake needs to bake the batter through without burning any apples. The custard mustn't boil. Attention - that means quite a long bakingtime.

5. Tuning The Cake: Theoretically after cooling down (this is a european cake that was developed for eating at roomtemperature or even chilled) the Cake is ready for consumption. But you have the possibility of bringing the cake to perfection. Take some whipped cream and put it on top of the cake (see below). You now may decorate your Cake with Cinammon, Cocoa, Nesquick, Chocolateflakes or what ever you think might fit.

Now take the appropriate drink (Coffe / Tea / Cider - dry recommended), sit down with some friends and enjoy your Cake.
